Episode 137 - More Dogs Licking Kids Please...

Chicken Handi Recipe


Total Cook Time 30 Minutes

Serves 2 - 3

Serve over your favorite rice.


• Boneless Chicken Thigh - 1 lb. (cut into bite sized pieces)


Spices (Amazon Links Below): ( I mix them all up together before adding to recipe)

• Turmeric powder-1/2 tsp

• Red Chili powder -1 tsp

• Kashmiri Chili Powder- 1.5 tsp

• Dahna Jeeru (Cumin) Powder-1/2 tsp

• Black Pepper -1/4 tsp

• Garam Masala powder- 1/2 tsp

• Kasuri Methi- 1 tsp


Other Ingredients:

• Onion, chopped- ½ Medium Red Onion

• Ginger Garlic paste-1.5 tsp

• Tomato Paste-3 tbsp

• Plain Yogurt- (5-6 tbsp)

• Heavy Cream - 5 tbsp

• Cilantro Leaves chopped- 4 tbsp

• Salt-1 tsp

• Oil -4 tbsp

• Water-¼ cup


Directions:

• Heat oil and add the chopped onions.

• Fry on medium heat for around 5 mins until translucent, then add the cubed chicken pieces.

• Fry it on high heat for around 2 mins and then add the ginger garlic paste.

• Mix and fry on medium heat for around 3-4 mins till browned.

• Now add all the spice powders and mix & fry on medium heat for around 3-4 mins.

• Add the tomato purée and 3 tbsp of the water and cook on medium heat for 3-4 mins.

• Now switch off heat and add the whisked curd and fresh cream. Mix well and switch on heat.

• Cook on low heat for 4-5 mins till oil separates.

• Add 150 ml water, give a mix and cover & cook covered for 5 mins.

• Add crushed kasuri methi and give a mix. Cook for 2 mins on low heat.

• Lastly garnish with chopped coriander leaves and serve.
